It's World Vegetarian Day!

Even if you're not a vegetarian, we all (or most of us) eat vegetables, and I'm forever trying to find new and better ways to include more fruits and vegetables in my diet. Lately I've been relying on stir fries, because they're so easy and because I can embellish in whatever way I wish. My favorite of late is a mix of cut up asparagus, thinly sliced broccoli, thinly sliced cauliflower, chopped onions and red pepper, all quickly sauteed in a bit of olive oil. Then I throw in a dash of Tamari, garlic and ginger, stir some more, then add a handful of whatever greens I happen to have on hand (spinach is a favorite but I've used lettuce, too) and then as soon as the greens are wilted, I pop it out of the pan.

I did have a picture of that. The dish is rather pretty, but the image was blurred, so this one, which is a bit different and isn't mine will do nicely instead. It's a much better image of a stir fry than mine was.
